Giving Thanks: Fall Flavours, Pumpkin Spice & Thanksgiving Menu Inspiration
By Chantel Mackay, Executive Chef & Owner, Sunflower Catering
October in Nova Scotia is all about rich colours, crisp air, and gathering with the people we love most. It’s a season of gratitude—and few things say "thank you" quite like a warm, thoughtful meal shared around a table.
Here at Sunflower Catering, fall is one of my favourite times to create menus. It’s a celebration of local harvests, classic comfort, and yes—a little pumpkin spice magic. Whether you're hosting an intimate dinner or planning a bigger gathering, here are some of my favourite ideas to inspire your Thanksgiving table.
1. Celebrate the Harvest
Think roasted root vegetables, buttery squash, and local apples turned into crisps or chutneys. Incorporate what’s in season to let the quality of local produce shine.
2. Buffet-Style Abundance
Buffet service is perfect for Thanksgiving—warm, relaxed, and inviting. Offer options like:
Herb-roasted turkey with classic gravy
Vegetarian mains like stuffed acorn squash
Savoury bread stuffing with apples and sage
Creamy mashed potatoes or roasted mini potatoes
Green beans with toasted almonds
Fresh-baked dinner rolls
Seasonal salads with cranberries and pecans
3. The Pumpkin Spice Twist
Sure, pumpkin pie is a classic—but think beyond it!
Pumpkin-spice cheesecakes
Pumpkin mousse parfaits
Spiced pumpkin soup with cream swirl
Pumpkin lattes or cocktails with warm autumn spices
4. Flavours that Feel Like Home
Thanksgiving is personal. Maybe it’s Nan’s cranberry sauce or your uncle’s sweet potato casserole. When I build custom menus, I love hearing these family traditions and finding ways to honour them while elevating the meal.
5. Don’t Forget the Details
It’s the little touches: labeled buffet cards, autumnal florals, flickering candles. Your meal should be a feast for all the senses—something I always aim for in our events.
Final Thoughts:
Thanksgiving is about gathering, gratitude, and sharing the abundance of our province. If you’re hosting this season and want to make it truly special—without the stress—Sunflower Catering can help you craft a warm, welcoming menu that celebrates the best of fall in Nova Scotia.
