Method:
Homemade pasta
1. Thoroughly sanitize your workspace
2. On your table place 300g of flour making a bowl in the middle of the mound.
3. Separate the egg whites from the egg yolks.
4. Add egg yolks to the middle bowl in the flour.
5. Fold in the flour into the eggs to create a sticky dough.
6. Knead dough until it feels smooth and silky, dusting with flour if too sticky.
7. Set aside to rest for 20 min.
Cooking pasta
1. Using a pasta press roll out pasta into thin sheets.
2. Pass thin sheets through a fettuccini blade on the pasta press allowing for thin long strips.
3. Group pasta into little bundles/nests.
4. Bring water to a boil, once boiled add salt.
5. Add each nest to boiling water.
6. Cook until Al Dente, slightly firm to the bite.
7. Strain out water and toss in olive oil.
8. Set aside to cool.
Greek Salad
1. Cut cherry tomatoes in half.
2. Cut cucumber into small cubes.
3. Slice green peppers into thin strips.
4. Slice red onion into thin strips.
5. Crumble feta.
6. Add all ingredients to clean bowl.
Dressing
1. Blend olive oil, crushed garlic, oregano and red wine vinegar together until emulsified (blended).
2. Add all ingredients in a bowl and mix with the dressing.
3. Serve in individual portions.
